Operation: Healthify Shadow Update

I was taking the pics to document Shadow's progress for this week. In some of the ones I took she looked a lot skinnier, but I started to realize that she looked a lot skinnier as she breathed in, much like when people "suck in" to look slim. So I tried to take more objective pics to ensure that they were realistic. So if it doesn't look like a big difference, it's because I think the pics from last week were taken when she was breathing in. We are still sticking to the plan and I'm excited to see her get healthier! What have you done for your pooches to help with their health?

Operation: Healthify Shadow

The dogs were playing outside a few weeks ago, and I was taking pictures, as usual. As I began looking through the pictures later that day, I saw these two:
And quickly realized, Oh My Gosh. Shadow's weight has climed a lot over the last few years. This is not. good.
It's hard to realize it when you see them every day. I went to a store nearby (a pet store...but not one that supports selling animals). I talked with someone about her diet and made a plan. I cannot afford to do a raw diet, but I chose a high quality kibble to try out. I also got a measuring cup to closely monitor her intake. She is starting out getting 2 1/2 -3 cups a day, depending on if we put in added nutrients with the kibble, like yogurt or protein sources like eggs.
I have decided to take weekly pictures to monitor her progress. Here she is on day 7/week one:

She is starting to get little indents where her waist should be, yay!

Veg of the Week

...long overdue!
I've been eating a lot of the same things I have already blogged about on here before. Between that and just adjusting to my still somewhat new work schedule, Veg of the Week has been lacking.
I think I've posted about these chocolate cupcakes with almond buttercream icing before but...they are SO good I have to talk about them again. This is only the second time I've made them because the first time I made them I couldn't stop myself from eating 4 at once, which resulted in a big stomach ache :)

These cupcakes and the icing are vegan. They are also made from scratch, which is fun to me because it feels like art!

I bought a very cheap, very non-Kitchen Aide stand mixer. It works for now. But one day... I WILL have my own Kitchen Aide stand mixer, maybe even a custom one!

Fluffy icing! It was slightly hard to spread smoothly so I think next time I'll add a little more almond milk. The recipe stated 1.5-2 tbsp, and I did about 1.5.

Next I made these fancy little things I found at the store today:
Eggplant fries! I saw a dish with battered eggplant at Olive Garden once...I didn't get it, but have wondered what battered eggplant would taste like ever since.
you just follow the directions on the bag... preheat oven to 400 degrees... lay fries out on a pan...bake for about 18min, turning once.
I love ketchup.
These were pretty good. I don't find myself feeling like I've been missing out by not trying this sooner, but they definitely weren't bad. Anything I can dip in ketchup is good by me. Plus, I like that it's a twist on the traditional french fry and you don't get just one starchy vegetable- instead you get a mixture of flavors. So it's a fun change-up from the regular french fry.

Humane Society Pooches

I'm doing this post on my phone. Does anyone know how to get the pics in the right order when you post from an iphone? I try to just add them to the post in the order I want, but it mixes them up. Anyway... Chad and I went to to Humane Society again last week and visited with some of the other pooches. I'm going to just post the pics and will add more to the post once I'm on a regular computer! ****(It's updated in the right order now! :))****

First we decided to play with Hannah again (the pooch we posted about in the last Humane Society post) because, well...there's really no explanation needed. Look how awesome she is!:

Then we spent some time with this beautiful boy Jeb. He is so fun and energetic. He's a trickster- when he's in his cage, he's calm and quiet, but as soon as he's in the yard it's full speed ahead! Tons of fun! His personality reminded us of the dog on the insurance commercial that says "Talking animal character?" Have any of you seen that commerical?

Lastly, we spent some time with the coolest chihuahua's I've ever met in my life, Fifi and Jasmine. If Spuds would be more respectable to small dogs, we would have realllyy wanted to take these two home in a heartbeat.
Two little runts, wiggling around! The best way to describe them is that they "come in a pair." I couldn't see one without the other. The are very laid back and just beamed while we had them in the play yard. They seemed to enjoy getting out with us.
I think Fifi is in the foreground here, and Jasmine in the background. Dont worry, that hole doesnt lead anywhere.
I think this one is Jasmine, because she has the smaller head of the two of them. So. Sweet.
Hannah has since been adopted as far as I know. She's not on the shelter's adoptable dogs page anymore. This is a no-kill shelter. If you are interested in these pooches, visit
We don't actually live in the same area that the shelter is in, but it is one of the closer ones to us, because, well, we kind of live in the middle of nowhere!
